
Refreshing, crunchy and delicious – a great accompaniment that can be made in advance. I served this alongside my Tandoori drumsticks and the flavors were a perfect pairing.

Ingredients:
- 2 english cucumbers, sliced lengthwise and seeds spooned out
- 1/4 cup thinly sliced red onion
- 1/4 cup combined mint and cilantro
- 1/3 cup plain greek yogurt or unsweetened coconut yogurt
- 2 garlic cloves, minced
- 1 TBSP fresh lemon juice
- 1 TSP group cumin
- 1/2 TSP ground coriander
- 1/2 TSP salt
- 1/2 TSP freshly ground pepper
Instructions:
- Slice cucumber into bite sized pieces, then add to a bowl with the onion, cilantro and mint
- Stir the yogurt together with the spices, garlic and lemon juice
- Pour yogurt mixture over cucumber mixture, toss until coated well. Leave in fridge until ready to serve
