Yogurt Cucumber Salad

Refreshing, crunchy and delicious – a great accompaniment that can be made in advance. I served this alongside my Tandoori drumsticks and the flavors were a perfect pairing. 


  • 2 english cucumbers, sliced lengthwise and seeds spooned out
  • 1/4 cup thinly sliced red onion
  • 1/4 cup combined mint and cilantro
  • 1/3 cup plain greek yogurt or unsweetened coconut yogurt 
  • 2 garlic cloves, minced
  • 1 TBSP fresh lemon juice
  • 1 TSP group cumin
  • 1/2 TSP ground coriander
  • 1/2 TSP salt
  • 1/2 TSP freshly ground pepper


  • Slice cucumber into bite sized pieces, then add to a bowl with the onion, cilantro and mint 
  • Stir the yogurt together with the spices, garlic and lemon juice
  • Pour yogurt mixture over cucumber mixture, toss until coated well. Leave in fridge until ready to serve
