This delicious chicken recipe is lemony, herby and the perfect pairing for any dinner. Slice and serve over a salad or pasta dish or with a side of veggies. Once you’ve made this once this chicken recipe will be an easy dinner staple.
Ingredients:
1 pound organic boneless skinless chicken breasts
3 garlic cloves, crushed
1 lemon, juiced
3 tablespoons olive oil
1/2 cup parsley
A generous pinch of Salt & Pepper

*Serve over a salad, rice pilaf or couscous with raisins
Instructions:
- Pound chicken breast to roughly 3/4 inch (to do this place chicken breast in ziplock bag, and smash it using something heavy like a rolling pin)
- Place pounded chicken breast in a mixing bowl
- In a food processor add the garlic, lemon, oil, parsley, salt and pepper – pulse until it forms a sauce
- Pour the sauce over the pounded chicken, cover and place in the fridge for a minimum of 1 hour – the longer the better, this is great to food prep and marinate overnight.
- Using a grill, grill pan or regular pan on the stove cook for 5 minutes per side
- Note: If you try to turn the chicken and it feels stuck, it isn’t ready to be flipped – it will unstick itself once ready to flip. When the internal temperature is 165°F it is safe to eat.
- Serve with your choice of sides and enjoy!
