Crock Pot Granola

Do you realize how easy it is to make a healthy homemade granola? If you did, you’d never buy store bought again! This is a great base recipe that can be customized to your liking. Give it a go!

Ingredients:

2 cups organic old fashioned oats
1/4 cup pure maple syrup or raw local honey
3 tablespoons coconut oil
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract, optional

Optional Add-ins:
1/4 cup flaked unsweetened coconut
2 tablespoons almond pieces
2 tablespoons hemp seed
3 dates, diced into small pieces
2 tablespoons golden raisins

Instructions:

Rub the bottom and sides of a crock-pot with a little bit of coconut oil. Add the oats, maple/honey, coconut oil and extract, plus any additional add-ins (except the dried fruit), stir to fully incorporate.

Cook on high, uncovered for one hour. Then give it a mix with your spoon before cooking on low, this time covered, for 2 hours. At the last 30 minutes add the dates and raisins.

Store in airtight container for up to two weeks.

Makes about 2 1/2 cups granola, this recipe doubles easily
