This dish has three of my favorite things: pasta, avocados and pesto. Can you ask for more? It’s easy to make and absolutely delicious. You can easily swap out regular pasta for a protein dense alternative like lentil pasta to make this a complete meal.
Ingredients:
Preferred brown rice pasta, or pasta of your choice
2 cups lightly packed basil
1/2 cup pine nuts
2 ripe avocados, pitted and scooped
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup parmesan cheese, optional
1/4 cup sun-dried tomatoes, diced, optional
2 cups lightly packed basil
1/2 cup pine nuts
2 ripe avocados, pitted and scooped
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup parmesan cheese, optional
1/4 cup sun-dried tomatoes, diced, optional
Instructions:
- Cook pasta according to instructions. While cooking, prepare the pesto:
- In a food process all all ingredients except the sun-dried tomatoes, blend until creamy
- Toss warm pasta into pesto sauce. Top with the diced sun-dried tomatoes and serve immediately
