Picture this: you’re basking in the sun, feeling the warmth on your skin, and sipping on a delicious Virgin Piña Colada that not only tastes like paradise but is also packed with wholesome goodness. I’m talking about a blend of frozen pineapple, creamy coconut milk, and the natural sweetness of dates – all coming together to create a nutrient-dense, frozen dream.

You might be wondering – does Juliann all of a sudden… dare I say… LOVE summer? Well, let me tell you, this drink has the power to convert even the staunchest summer sun hater into someone who’ll gladly bask in the golden heat for a weekend. But here’s the twist – it turns out that postpartum anemia has me acting like a literal lounge lizard. I find myself yearning to sprawl out on a hot rock, soaking up every bit of that glorious heat. So, with that said, you can bet I’ll be whipping up these beauties all summer long. After all, why would I want to step away from the sunshine when I can enjoy it with this delicious drink in hand?

So, dust off that blender and let’s whip up a taste of summer that’s not only delicious but also nourishing for the body and soul.


  • 16 oz frozen pineapple
  • 1 can coconut milk (I like Native Forest’s ‘Simple’ coconut milk and Trader Joe’s coconut milk as both are free of gums and thickeners, containing only coconut milk and water as the ingredients)
  • 4 pitted dates
  • 1/4 tsp of ground turmeric (optional – to give this a beautiful golden hue. I clearly forgot to add it but I will be adding it next time)
  • Pinch of pink salt


  • In a bowl add the dates and pour hot water over top to allow them to soften, this takes just a couple minutes.
  • In a high powdered blender add the frozen pineapple, coconut milk, softened dates and the pinch of salt.
  • Blend until smooth
  • Pour into 2-3 glasses and enjoy, poolside of course!
